Now that Spring has sprung & summer is just around the corner, what veg dishes/recipes are your favourites to go with main dishes?

I'm thinking mainly for grilled meat (BBQ) which we tend to cook 4-5 nights out of 7 (weather permitting).


Ratatouille is off as the last one I made was a bit rubbish - unless the recipe is idiot-proof.


Also, I'm going to try some vegetarian pies & am looking for interesting fillings.

These will be a "log" type pattern & intended for hot & cold eating.

For grilled/BBQ meat, we generally do a medley of dishes depending on numbers being fed.

Home made from scratch: (obviously smile )

New potato salad - quite herby, shallots, chives and some fine spring onion.
Sweet / Mediterranean couscous - using fresh apricot or even peach, herbs, red onion, finely chopped (peeled) tomato, lemon/lime etc
Coleslaw - use the basic three ingredients and then quirk up to your preference.
Baby plum (the best you can buy) salad with shallots, chives or spring onions and tons of coriander finished w lime.

Grilled courgette and toasted pepper salad (in olive oil and lemon)
Portobello flat mushrooms (as large as possible) simply grilled with OO

Large button mushroom and pepper salad (mixed peppers for colour) kebabs - marinade or BBQ sauce to your preference?

Left field option, spicy (think curry spices) sautéed potatoes done on the hob I'm afraid.

We seem to get away with 3 or more of the above depending on numbers.....

Totally agree! Forgot about this. But don't stick too much couscous or grain in it.....

Nice nut salads go with meat also.

Have a look at the main BBQ thread as there are some ideas in there smile (amongst the meat/smoker fest)

French green bean salad with mint, feta, olive oil and a splash of red wine vinegar (sorry for the photos - it's the only one I could find):

With BBQ meat - celeriac remoulade. By the bucketful:

Half a celeriac, grated finely and the water squeezed out. Half a lemon on top of that. then a couple of desert spoonfuls of good french mayo, two of craime fraiche and a teaspoon or two of dijon mustard. Mix well. Leave for a good couple of hours. Mix again. Eat.

I defy you not to like it!

For something very quick and easy for an off the cuff BBQ:

Cans of assorted pulses (butter beans, flageolet beans, black eyed peas, etc.) quantity to suit numbers dining

Jar of nice quality pasta sauce, fresh basil, cubed feta if you like it. Empty cans, drain & rinse add sauce, etc. Stir and into bowl.

Super simple side I often serve when barbecuing is grilled lettuce. Split a Cos or Little Gem in quarters lengthways, quick drizzle of olive oil then straight into the hot grill. Squeeze of lemon juice and a sprinkle of Parmesan or pecorino then serve.

Couple of favourites:

- leaves (the "bistro salad" type stuff the supermarkets do work well), St Augur, sliced pear, walnuts and a dressing of balsamic, honey, garlic, olive oil, salt, pepper and dried basil.

- plain couscous, cherry tomatoes, fresh mint & coriander, halloumi and sweet chilli sauce.

- tomato and onion salad

- piedmont peppers (Delia's recipe's pretty good, though adding balsamic can liven them up too).
