If your cooking on the BBQ then those flat and wider skewers make it easier to flip them all like you see in the kebab shops.
Simple marinade of crushed garlic, harrisa paste, lemon juice and some olive oil is what I use for mine and cook them indirect away from coals with the lid on at 180-200c with a drip tray underneath. Take about 50mins to get nicely crisped up and the bones should just pull out with a gentle twist. You can add some wood chips for a slight smokey flavour.

The problem with marinating wings before cooking is that you burn the marinate in the frying process and it tastes awful. As posted above, either soak them in buttermilk or brine them before a coating of flour and a quick shallow fry then finish off in the oven.

I know this will sound too simple, but it works, Honey BBQ chicken wings
Coat the base of a a dinner plate in golden honey
Add a teaspoon of Olive oil, and dark soy sauce a little at a time to taste, until you get a smokey flavour
Pierce the skin of chicken wings and coat in the mixture
Leave in the fridge for 8 hours, then coat again before placing on the barbie
Potato salad
Cube potato's and boil until cooked
Caramelize onions
Put mayo in a bowl, add chilli powder until rather hot, Garam masala, Turmeric, add a little squeeze of lemon juice and the caramelized onions and mix together. Then add the potato's and mix well together, place in a cold fridge for 2/3 hours. the temp of the ingredients with the spice work well together.
Serve together with a Greek salad and don't forget the beers, enjoy.
