2 weeks off work, a HT, a passport and £600, where to go?

I'm looking for insperation here folks, as I'm thouroughly fed up with aholes at work!
I've got 2 weeks holiday I need to take to being me "back on track", work speak for you have too much leave banked. So with a budget of £600, a passport and a hardtail, the question is where to go!
I'm just north of London, so Eurostar is the obvious choice on transport. It doesn't have to be the full 2 weeks for that budget, even a few days in the mountains would be nice. If the bikes too much I can go walking / hiking (grew up walking Snowdonia / The Long Mynd a lot), so have hill / mountian sence.
As for dates, anytime between end of July and end of Sept, beginning of Oct. I have the luxury of being able to go outside of school holidays.

2 weeks with this budget I cycled lands end to John o Groats keeping away from the main roads, and only the little baby country roads. Eat in pubs every night, and stayed in hostels and cheap B&B to avoid the camping kit carrying.
Was a magical trip, superb scenery and experience, and for me just a wonderful time.
You'll get to meet up with loads of people on the route too (if you want that kind of thing)

I've no probs roughing it! I've got minimalist camping gear, and a bit of a bush rafter at heart. It's also a ht deliberately for this kind of idea, as it can take full panniers.

I'd definately go abroad, the UK is nice but you can ride when ever you want. I like other cultures so I'd go look at low cost airline destinations and see what you can afford. From Gatwick, Easyjet fly to Salzburg, Innsbruck, Zurich, geneva.....

Being drunk on the joy of not having to keep all my weekends free for work for the first time in almost a decade, I've already booked myself a full calendar of cycling and running events on the majority of the weekends that are free of other commitments up until October. Despite being on a bit of a work sabbatical, I no longer have a two-week window this summer.Riding on top of the mountains from hut to hut would be exactly the kind of adventure I'd be into though.
