Peak values aren't much use as data points. A bump can be sufficient to give you a large value there for example.
Sustained values are more significant since this dictates how quickly you can stop or corner.
The 991 GT3 achieved sustained 1.12G max during cornering in the car and driver test on the new generation of tyres. The 997 GT2RS sustained 1.07G max during cornering on the last generation of tyres.

That correlates with my experience on track with the GT3 - usual max sustained (rather than instantaneous peak) is around 1.1 to 1.15. The 1.21 at Silverstone is through turn 2 left hander after the new start finish straight and this has some positive camber at the apex that helps.

very odd, i just looked on my laptop for my bike trace, gps lat acc shows highest value of 1.6g brands (druids) and 1.29 for donington (craner) with gps braking showing max 1.04 and acceleration .94.
