Inspired by the vindaloo thread I've got my meat marinating lick

Does anyone have a good veg curry recipe I serve as a side. (preferably with courgette Mrs PR loves courgette)

As someone who is pretty much a veggie I just make may favourite curry but use aubergine or butternut squash instead of meat, I find courgettes melt away to nothing if cooked too long. But this is a curry I make from my fav curry book Complete Indian Cookbook by Mridula Baljekar
Ingredients
cooking oil
1 large onion
1/2 inch cube fresh ginger
1 tsp ground turmeric
1 tsp group coriander
1 tsp group cumin
1 tsp paprika or chilli powder if you want hot
4 ripe tomatoes or 1 can
8oz diced potatoes - par boiled for 5 - 10 minutes
4 oz green beans
4 oz carrots
4 oz peas
15fl oz warm water
2-4 fresh green chillis
1 tsp garam masala
salt to taste
1 tbsp. chopped coriander

fry onions until lightly browned
add ginger fry 30sec
turn heat to low add turmeric, coriander, cumin and paprika/chilli - stir well
add half tomatoes fry for 2 mins stirring
add all the veg and water stir and mix well bring to the boil cover and simmer until tender (15 - 20 mins)
add the remaing tomatos and green chillies cover and simmer for another 5 - 6 mins
add garam masala (and salt if required)stir in half chopped coriander remove from heat
plate, sprinkle with coriander, eat, enjoy smile

Thanks, I know courgettes are tricky things, I tend to pop then in last and serve the curry before they turn to mush.
