I've just been given a bag containing 7 or more Black Truffles whilst staying here in Italy. What a great surprise and very grateful however I'm driving home Saturday and Sunday so really only have one evening and one day to make the most of them.

We've already got our final meals planned (staying in the outback here and the nearest shop is 40 minutes away!) and we've got one BBQ planned and one fish meal. Lunches we're going to be leftovers etc.

Any thoughts from those who have cooked these mushrooms previously?

Surely they'd keep in an airtight container? Better still, and airtight container filled with some lovely eggs.

Failing that, just grate them over anything. Steak, Omelettes, Chicken, Risotto, Pasta etc or adding to creamy sauces?

How about thinly slicing and pressing in the middle of a burger?

If I put them in an airtight container will they survive a two day journey home in the car?

Was served truffle popcorn with pre lunch G&Ts last week, lovely.

Interestingly they've been given to us in a paper bag yes

Shelf life is quoted at two weeks or so, can I freeze them when we get home to extend that?

I can do that Monday when I'm back in the UK, will they be ok out of the fridge over the weekend?

You can freeze them and then just remove them from freezer and grate over whatever you want then back in the freezer (air tight container or vac sealed). they loose a bit of texture but thats not a problem if they are grated. its the only way that you can store them long term without losing too much flavor. best to use fresh though.

In terms of recipe ideas. simple one is to make truffle butter which prolongs the aroma. this can be used on bread or as a last minute addition to grilled meats etc. best not to cook the truffles though as they lose their aroma.

thrice cooked chips, grate parmesan and truffle over the top. Simple, but ooft.
