All depends on the age predominately.
The last of the Griffs and Chim 500's were identical under the skin so nothing between them.
The older cars came out in various variants and I am sure someone here can comment further on those.
On the whole though the Griff is known as less forgiving than the Chim as it had harder suspension etc.

Whichever you get it will be lots of fun.
You just need to decide which you like more. The Chimaera is slightly softer, but IMHO is therefore more useable.
The Griffith is perhaps more "pure" and I'm sure it would be more rewarding on a track day, but the Chimaera would be unlikely to disappoint either.
At the end of the day just choose the one you like!

Don't be put off the Griff because it's "harder". The difference is very small and depends more on the age and condition of car IMHO. The decision is down to interior and exterior design and whether you would rather have something other than the 5 litre - more 4 litre Chims to choose from.
I posted exactly the same question about a year ago - I chose the Griff (and you can get golf clubs in a Griff too!)
It does give you a perfect reason to test drive all the different models!

I think you summed it all up in your question. You'll find a lot on this in the archives, but my view is to buy the one you like the look of most. Whether it gets to 60mph in 4.5 or 4.9 secs is not really important for 99% of the time. There's also cost and running costs to take into account, which might swing it for you. The other tip is to get the best you can afford.
When I had my last decision time in 1999, I decided I liked the front of the Griff most, but the back of the Chimp a bit more. It wasn't really feasible to find someone of the alternate persuasion and swap halves with them, so I reckoned the front view was more important than the back view and chose accordingly. I was also described at meetings as the crazy bloke who wanted to put Griff pods in a Chimp, then Zertec started doing very similar things, and now people can't leave their lights alone for a minute! All royalty cheques to me please...
