Going to attempt one for dinner this weekend for a date(how romantic). However I don't like mushrooms, at all.

Can I skip the mushrooms out or can anyone suggest a different version?

but the mushrooms are made in to a rough paste. You could make a smoother paste if it's a textural issue you have.

Or an alternative could be patè, or a breadcrumb and herb stuffing made to a light consistency. The function is really to form a bed to soak up meat juices so as not to have soggy pastry.

People use cous cous. Some use crepes. I think some sort of savoury layer adds to the overall taste of the dish.

Fine without the mushrooms. I noticed there's no foie gras or pate in the recipe you've posted, maybe add the pate instead as it will add more flavour when cooking.

Pate and then wrap the beef up in parma ham or something like that and then pastry.

Pancakes are traditionally used to help soak up the juices from the fillet steak so you don't completely bugger up the pastry, especially underneath.
