Is there an easy way in Outlook of automatically assigning a signature to certain email addresses only?

Have a look on the Mail Format tab of the Options dialog. At the bottom the are the signature settings, which allow you to pick a signature for the accounts you have set up.

Set up all signatures you require

Click new mail message

right click toolbar and select customise

under insert, you should see signatures

drag and drop on toolbar

arrow on the right and select your signature

not automatic but gives you the result
