Bare with me here. I'm 28 and Scottish, therefore my diet consists of 3 mcds a week, a few more takeaways and mince and tatties as a healthy option for the rest of the week.

But I had since started to make my own dinner. Last week it was a baked potato and a salad, I enjoyed it so much I made another salad with my dinner later in the week. I know, I know, Ainsley Harriott eat your heart out.

Last night I pushed the boat out and made homemade chips in the oven (they weren't bad) and chicken satay (I burnt the sticks sending my chicken into an episode of London's burning) that was edible.

I am going to try to make pizza this week as well!

But I never know what to cook, I look at recipes online and they assume that the reader isn't a fking idiot like me. I can make thinks like spag bol, mince, roasts etc pretty well. But these become boring.

So I ask, can people recommend semi easy meals that are away from the norm of mince and tatties or turkey dinosaurs. I don't mind an hour cooking time.

homemade beef burgers sound great.

Baked chicken pieces/breast is dead easy and can be surprisingly good.
Make up a marinade using whatever herbs and spices (preferably fresh) you have to hand and some olive oil, pop the chicken and marinate in a plastic bag. Give it a good squeeze/rub/massage and leave for ten minutes or a few hours/overnight. When you're ready to cook just pop them in a preheated oven for 20-30 minutes, until cooked.
I like to cook them in folded foil 'bags' - seems to infuse the flavours a little more and saves washing up. hehe

Steamed or even roasted veggies on the side.

My herbs and spices rack consists of some polos and a packet of nik naks, what do I need for this?

Whatever's fresh at supermarket or your (neighbour's) garden. Maybe some or all of rosemary/sage/thyme - robust and tasty. Dried is okay but you'll appreciate fresh if possible.

BTW, you could grill the chicken if you prefer, even a George Foreman stylee is fine.

I find that when I grill chicken its too dry.

But thanks that's a nice easy one I could do with my homemade chips. I'll need to keep an eye out for these oven bags. I sometimes get a roast beef that is cooked in these, 30 mins cook time but my god its so soft when you come to cut it. Normally my roast needs carving with a jigsaw, cut with a stake knife and then swallowed with water like your taking tablets.

do I just break up some herbs and rub them into the chicken with the olive oil>?

Do you have a griddle pan?

Pop the chicken on the griddle for 3 minutes each side and then pop in the oven to finish for 15 Minutes.

It means 1/2 a cup of beaten egg - depending on eggs size - 2 eggs.

This is gonna get frown on but

Ive made doner meat before, it was lovely. Load of mince, loads of spices, roll into a loaf and lob in the oven.

I also have a really simple rogan josh recipe that 3 steps, stick these ingredients in a blender, cook the meat and these spices, stick the stuff in the blender in the pan, done.

I use water instead of the lager and lob in some plum cherry tomatoes/quartered tomatoes/cherry tomatoes

I'm really lazy so don't have rice with curry, just crispy/crunchy bag salad and a naan, I 'grill' the naan in the toaster.

Korma is easy too, but so much butter...

Salmon and pasta bake? Red onion and courgette, sliced, fry them until softish. Meanwhile boil the pasta. Once veggies soft add some white wine and creme fraiche until it's enough to cover the pasta. Put salmon pieces into the bottom of a large ovenproof dish and put pasta and sauce on top. Leave in the oven at 180 for 20 odd minutes and it'll be lush. I season as I go but you may wish to add salt/pepper as per your preference.

Chicken - breasts/boneless thighs wrapped in bacon and ovened are easy and tasty, can add some cheese in the middle of the chicken if wished. Serve with salad/pots or rice.

Lamb curry - Jamie's lamb biryani recipe is super easy to make and only requires basic stuff from the spices aisle...

Starting simple and going to build up, so tonight I am going to make homemade burgers and chips. Will the George foreman be ok for the burgers as I'll be cooking the chips at the same time in the oven and cant grill and heat.

Going to try a pizza from scratch.

From the takeaway idea, some homemade breaded chicken.

Shepherd's or Cottage pie or Lasagne are all piss easy to make and can be portioned up and put in the freezer for when you can't be arsed to cook.

Moussaka is slightly more difficult but goes very well with chips and also freezes well.

Fruit crumble is vaguely the same method, prepare and bung in the oven, cook and freeze.

Try using Patak's curry paste (not jars of readymade sauce); they are about as authentic as you can get for an “instant” curry. Fry paste with onions, add meat, chopped toms serve with rice.
