I’ve noticed that some Griffs have the seats with the adjusment lever on the left and some with it on the right. What’s the correct default, and does it make a difference to the alignment of the seat or are the seats symmetrical in relation to their anchor points ?

The adjustment lever for the backrest is usually on the outside. I've swapped my seats to even out the wear and they seem to be perfectly symmetrical,

Whilst driving my Griff' I suddenly realised that I was sinking lower into the seat, turned out the seat base strings had snapped. I've given up the pies now and had the seat re-strung and re-profiled. Whilst that was being done I just swopped over the passenger seat into the drivers position, no problem.

The back rest adjustment lever apparently used to catch the trousers and tear them (former owner, not me I don't wear flairs anymore )

I have a number of trousers with a ripped wallet pocket from the rake adjuster, so swapping them over so it's on the inside seems like a good idea to me.

However, fitting some Sparco buckets is a better one....
