I'm making a lemon meringue for the mrs later. One hitch - no baking beans for the case.

Proposed solution - washed gravel / pea shingle.

Genius, dessert failure or hospital visit around the corner?

Anything that wont melt as long as you've got some sort of baking paper between the pastry and whatever it is.

Rice - lentils or other dried pulses (I use chickpeas) - macaroni.

I've used coins to no ill effect (copper coins conduct the heat better). wink

Modern copper coins have very little copper in them.

Went with the pea shingle in the end. Worked a treat. Shame that old biddy on the tally's pastry recipe didn't work, and neither did the rest of it. Took 3 days to make a lemon meringue pie! Will use my own recipe next time.

Think it was on a Heston Blumental programme where he said to use copper coins as they conduct the heat better (on greaseproof obviously, not directly on the pastry).
