After buying a sim free phone, im free to choose any provider, and after testing tonight - tmobile's signal is best in my home (bad signal with the others here due to hill)
My phone has email, video/pics (not g3) ... and I remember reading that orange dont support my phone.
How does it work, exactly? The signing up to email and wotnot. My old orange sim works, but I assume I wont be able to use all features as orange dont support this phone...
I assume if Tmobile gives me the best signal, and I sign up for a pay as you go sim (which is what I wanted) i'll be able to get an email address, and send pics/videos through their network?

Dunno about the email issues, but you might want to consider Virgin Mobile too as they use the T-Mobile network
Im just not sure how I know when I buy a pay as you go sim over the counter, hot to tell whether it will work with all the features of the phone I just purchased

All the networks support WAP and MMS, it's a matter of entering the arcane network settings for the network into the phone. Most phones can now be set up over the air. This means sending a special text message to the phone whihc puts all the settings in.
Your operator can usually do this, but some operators (Orange for certain) play dumb when you ask to do it for a phone they don't sell. Phone customer services and ask.
What Mobile magazine has a list of all the settings in the back, but you really do need to know what you are doing, and what you want to work out where to enter the APN, DNS, various IP addresses etc.
What phone is it?
Some phones can be set up by going to the manufacturer's website and doing it from there.
