I've just bought four new PSSs for my M5 but I reckon I've still got some life left in the current ones. I'd say they are now about 3mm all around, maybe a bit more. Should I get another couple of thousand miles out of them or just change them now?

Of course you can run them to the legal limit of 1.6mm however under 3mm any tyres at this width struggle to displace water at the rate they need to during a decent rain shower and you then end up aquaplaning.

You may also find the lower the tread the car simply becomes more slippery on the road when pushing on yes

I've always put safety above a few hundred quid myself.

Nowadays 3mm is the advisory at which point you should change tyres.

As said above, 1.6mm is still the legal limit, but performance once below 3mm will be vastly compromised & as we're entering Winter assuming you're not switching to Winter Tyres, i'd get the fresh rubber on ASAP.
