Rolled/stuffed Pork Belly ideas ?

Want to to do this soon but cant decide on the stuffing.

Part of me says trad apple/sage or maybe just fresh herbs.

However, I do like crushed fennel seeds with pork, so maybe a moroccan ish type twist ?

What have you got ?

Dried fruit. Apricots and prunes etc.
Had it a few times and its bloody lovely.

Liking this direction at the minute. Problem is I love this cut and could have it far more often!
