I've got a turkey crown for xmas day, 2.80kg.

That's it, i have no idea how long to cook it for , usually cook roasts at 180c.

Get it submerged in a light brine 36 hours before. Cook until internal 70c and then rest in a cool box for minimum 80mins or until required.

Last year it took me 2 hours and 20 minutes. It was sooo tasty!!! Wish you good luck!

Have you tried this? Did you do a crown or a whole turkey? I have 15 to feed for Christmas and was thinking about brining, removing legs /thighs and cooking separately and doing the crown with the oven probe. Do the legs and thighs take longer if you remove them?

I bone the legs and stuff them, then cook wrapped in foil for 20 mins, and unwrapped for 25.

I'd expect the OP's crown to take 2 hrs 20.

I have brined breast only but not on the keel bone like the crown is. Personally I'd debone and de-skin breast. I'd then brine as described and then ballotine in cling over and over then oven to 70 c internal at say 90c until temp achieved.

If you try and brown the breast with a sear in an oven you will overlook easily.

The legs and thigh benefit from a higher temp and longer roast given their structure and especially their tendons which are like elastic bands. This is all achievable with conventional gear it's just thinking logically about the bird's anatomy to offer
best results.

Just checked ideal temps for turkey breast to be tender and safe. You want around 64c internal. A quick pan post sear would ensure any surface bacteria are killed dead.

We deep fried ours at the weekend. Juicy and not greasy. Best turkey I've ever had. This is the 4th year we've done it.
