Just picked up some discounted pork tenderloin and not sure what to do with it. The cuts are between 550g and 700g. I have three, will freeze one and make sandwiches and wraps with another, but I'm not sure what to do with the third one. I've done a stroganoff in the past but, as this was so cheap at just under 2.50gbp on current exchange rates, I'd like to try something I wouldn't usually do as I won't be that annoyed if I cock it up.

I've checked the search function but it just pulled up a thread asking what tenderloin is and another asking if you can make pulled pork with it.

Any suggestions?

Add layer of mozzarella, wrap in Parma ham, bake in the oven?

That sounds like a good idea, will definitely try that. But I'd still be interested to hear if anyone else has any ideas?

I cut it into sections about 40mm to 50mm high and fry or grill it like little fillet steaks. Great with a ginger and chilli sauce.

15mm slices, batten out to 10mm, pan fry in clarified butter finish with cream, brandy, mustard and chopped chives. Add some potatoes and veg and mmmmmmm

I've made similar to Tony's recipe, but with calvados with apple garnish.

Cut into good thick steaks, brown on both sides and set aside and keep warm. Use meat juices, garlic, minced shallot, white wine, cream and a whole 'Le Rustique' camenbert with the rind cut off to create a thick sauce. Serve over the steaks with homemade chips and green veg to make a delicious dinner.

Chuck it in the slow cooker with an onion and a can of coke , 4 hrs drain pull and add bbq sauce , hth .

"Pork Vreteno", almost a staple diet out here in the styx.
Slice longitudinally (imagine unrolling a swiss-roll,) tenderise, stuff with blue cheese, cranberries or whatever, roll up and wrap in foil and bake.
