I have completed a number of on-line quotes and some only ask for the average mileage for the last 2 or 3 years and not my expected mileage this year.

If I enter this in honestly, it will not reflect my estimated mileage for this year. Average has been 6K miles and estimated for this year 30K miles due to new job.

If I entered in my average mileage and had a claim then would they try and get out of it even though they didnt ask the estimated mileage?

I think they would try and argue that your expectation of a sudden mileage increase was a "material fact", and as such should be disclosed to them, regardless of what their form says.

Sorry guys, another thought occurred to me.

I am covering 2 sites at the moment. 1 is 40 mile round trip and the other 120 mile round trip. I am due to be there on a 2 week rotation so my mileage would be about 20K. What if this went up to 25K and I declared it to be 20K. Is there a margin for error on estimating or could I get by on what my company told me I would be doing. Feasably the mileage could go down to 15K as well if I am at the other site covering for a bit longer.
