Looking for inspiration for work lunches? I stumbled across these

I think they need microwaving as well as the boiling water but they are very tasty and healthy!!

We used to make them for office days - essentially an easy way to use up left over veg and have a nice hot midday snack.

The first time I saw a recipe was in Hugh Fearnley-Whatsisface's River Cottage Veg book. Just using angel hair / rice noodles or very thin egg noodles so they don't need microwaving.
