Edinburgh Nightlife - Where to go?

My mate's having his stag do in Edinburgh and the best man has asked me to find out about the nightlife (no idea why). Already got some ideas but just wondering if anyone here knows the score about the better bars and where to avoid? Thanks.

Posh drinks - along George street ie tigerlily, la monde, the dome, panda and sons and some of their retrospective clubs underneath, lulu, why not etc

Strip clubs - Lothian road bottoms up, burk and hare etc

Cowgate good for drinks too. Brewdog, lots of bars and the old stalwarts such as espionage.

I'm sure there are lots of people more recent on the scene as I moved away a good few years ago now. Looking forward to seeing the answers others give.
