Vitamix, definitely - we have one. Fantastic bit of kit, but bl**dy noisy. Expensive (especially the ones with pre-sets built in), but feels like its built to last & massively versatile. It's thought of (in USA certainly) as a commercial machine along with Blendtec for use in smoothie, frozen yoghurt, juice bars, so it's not the prettiest appliance on the market. Takes a bit of learning - it will generate a lot heat if you aren't careful - it can make steaming hot soup from cold ingredients through blade friction alone. It's a 2hp motor. Soups & sauces are incredibly smooth & silky - way better than a hand blender in the pan - no need to strain anything either. Ours is the "QVC special". Their video demo is hypnotic, you'll be amazed to hear...Only thing I don't like is using it as a juicer: it's a whole fruit juicer, meaning it doesn't strip the flesh away from the pith & skin, but pulverises everything - including seeds, so you have to add a sweetener (agave syrup or something) & the consistency ends up like a smoothie/shake rather than a juice. (First world problem, sigh...). I thought I'd be able to dump the juicer, but couldn't for this reason, but the Nutribullet & hand blender have been relegated & both probably headed for fleabay. As an aside, Mrs Fang & I made a marriage vow to never buy each other appliances or "things for the house" for birthdays or Christmas - I did a drunken, late night panic buy with this & it's probably the only bit of kit I could get away with that scale of vow breakage...It's brilliant. Off to aerate some red wine, but feel free to ask questions.
