Chainset and cassette changes

I bought a Boardman Team 29er which I enjoy off road but sometime feel it needs an extra cog on the chainset for road use.
I have no idea if switching from the Boardman 2 cog to a 3 cog chainset is do-able, or if putting a cassette with 11 cogs at the back is another option?
Is it as simple as changing the chainset or cassette and adjusting to suit? I notice the baordman has a three position gear lever.

I'm interpreting the OP differently and assuming the Boardman is too slow for road use?
You can put a larger (or smaller, if speed isn't the issue) chainring on the front, provided you adjust the front mech and check for clearance between the chainring and chainstay and check the chain length.

If it's the current model then I'd change the rear cassette (12-36t) to a 11-36t as this won't hurt the offroad abilities.
If you use the largest chainring offroad a lot then fitting a larger chainring will have impact as to how easier it is pedal offroad...but you can always shift down. A 41t chainring might be good compromise.

Swap the cassette for one with an 11T sprocket instead of the (I assume) 12T on there currently, and learn to spin! 110rpm is really not that fast a cadence, and even on your current gearing equates to nearly 31mph. Going to an 11T will up that to just over 33mph. Are you really regularly topping that?
