I saw a picture of the Vantage interior with black AC, navigation and radio controls. I think the picture is from the Vantage GT version. I really like the blacked-out look. I am wondering if the controls (knops) can be switched easily.

Does anyone did remove / exchange them?

As far as I know, you can't sadly. Well you can for a price (i.e. replace the whole stack)

The biggest issue is the joystick. You can take your existing knobs and have them sprayed, however when I had my console in pieces I couldn't figure out how to get the joystick off the housing, there were a few clips but it looks like once its initially assembled thats it frown

Joy stick is the only issue. The others outer bezels just pop off. I recently ordered the newer style satin chrome outer bezels to replace the standard chrome pieces in my DBS. Joy stick seems to be integrated into the fascia plate however.

Ordered from HWM. Very inexpensive.. I think $30-$40 usd each. I can't remember exactly but no more than that.
