You could make bindi bhajee!

Chop and stir fry with onion, garlic, ginger, mustard seeds, cumin, garam masala and seasoning. Maybe a chopped tomato or two.

Or, bindi masala - dip in coating of gram flour and deep fry, then add to a tomato masala sauce

OR, chuck into a stew with chick peas, prawns, chorizo, for a speudo gumbo,

or make real gumbo with it.

Plenty of recipes online around the above....

I quite like cooking with okra, it gives off a sap which makes a nice thick sauc - wvwn when quite dry like the top recipe.

Never been a fan of it until my M-I-L made this:

http://www.foodnetwork.com/recipes/paula-deen/frie...

It's proof (as if it were needed) that pretty much anything is edible when given enough seasoning and some time in a fryer.

Fried Okra is very common here in the southern US - that said, it's a non event imo.

Not worth the hassle.

I usually find that in the corner of my kitchen is a waist high stainless steel receptacle with a pedal on it and in the spirit of the slow food movement, any okra that crosses my threshold is given a similar treatment to say, a shoulder of lamb in the oven, I just throw it in there and forget about it, although I do tend to leave it in there for a good deal longer. I know its done when the gentle thrum and clatter of a bin lorry and its operatives are around, at this point I remove it, and leave it outside at the end of the drive to cool.

Works every time.

I have been known to chop it up and use it in a pasta dish, normally when pissed, but don't dislike it TBH

First time I saw it in stew form, it looks like the slime Aliens leave behind.
