Where in Europe is easy to get to, with good MTB'ing that doesn't need a guide and some uplifts?

Bored with doing bridle ways in the Chilterns and want a few days of something different! (if that exists?)

Morzine or Les Gets have a pretty good set of trails and are easily accessible from the UK and/or Geneva

how does that work? You just book a place locally and go ride around?

If you're riding XC, you just ride.

If you want to DH and use the uplift you can buy lift tickets whether that's per descent, day tickets or even weekly

Ok - so I book a flight, get a hotel near the hills - and get lifts up and ride down all day long? Sounds simple enough!

Pretty much...
Don't forget the apres-ride in the bar afterwards, plenty of that going on

With regards to flying, might want to check the luggage requirements for the various airlines, I think some insist on hard cases or specific cycle luggage.

If alone, why not join a guided group at Whiteroom, Basque mtb or similar?

How about Burgundy and the Morval Region, plenty of routes around there.

Go ride in Scotland, Cairngorms, tweed valley, torridon, you could do loads of brilliant riding without leaving the country.
