Sugar, flavourings, lots of pectin to gel it all together and then pour into moulds.

We used to make petit fours in a similar way. It's actually not that difficult.

No sorry I wasn't clear - how do they make it red and green ? I mean the process puzzles me how the red and green are semi mixed yet defined

It'll be 2 strips of coloured / flavoured gel pushed through an extrusion process, which causes the blurring of the mix.

I can't see a feed for the red part - yes it's petty but sometimes these things get you puzzled
