New bike for Mrs Miniman

I bought Mrs Miniman a cheap BTwin Triban 500 road bike a year ago, and yesterday she did 100 miles in just shy of 7 hours on it (see other thread on last minute repairs!). Our daughter is nearly big enough to ride the BTwin now so I am looking at an upgrade for Mrs Miniman.
Given the issues with the shifters, I'm inclined to look higher up the groupset range - perhaps 105.

Other stuff (Specialized, Felt, Cube, Trek) at that point seems to be down the bottom end of the Shimano range (Sora).
Any thoughts or recommendations gratefully received. I quite like the look of the Pinnacle.
