I bought a cast iron skillet for one of the cooking competitions way back. I thought I knew what I was doing regarding seasoning but cooking bacon recently I found it sticking a bit. I think it might be too much heat with the wrong oil. I would like to try some of the US seasoning products but they seem to be stupidly expensive to buy in the UK. If you are interested my entry was a Spanish tortilla. I needed a pan that could be put under a grill without the handle melting or burning

I just bought a Lodge cast iron skillet, haven't used it yet, but I think the website has a little video on how to season it if you have a look. I'd try and find if but I'm on my mobile at the moment

I seasoned my Lodge the other week and although I've not used it for anything yet I think I might have done a good job, if I run it under a tap it behaves like a non stick (water just runs off).

How are you washing it? I let one of my offspring near the cast iron pan the other week, and caught them with fairy liquid and a steel scrubber frown

I know you can season them with regular oil, I believe Lodge use vegetable oil when they season them in the factory. Im just curious what a product specifically made for the job would do. My colleagues travel to New York on business so I could ask one of them to pick some up but that’s a few months off.

The are lots of Youtube videos, I follow the one that says don’t use soap, use warm not hot water and use a Lodge scraper to get the bits off. Paper towel then heat on the hob to remove any traces of water before applying a thin coat of oil.

What size do you have. I was thinking of getting a larger one but not sure whether to go for a 10" or 12"

The 8" I think.

Clean mine with warm water and a sponge pad thing

I have 2 lodge skillets

Both have never seen soap. To clean I heat then up and use a sponge scourerto remove the food, under running hot water.

They back on the heat to dry and then a coating of oil.

I have a lodge griddle (they call it a grill pan/fat free fryer), that unfortunately has been treated like every other kitchen pan...... soaked and then in the dishwasher...... is there away I can get this back to how it's supposed to be ?

It depends what condition it is in. Im subscribed to a channel on Youtube https://www.youtube.com/channel/UCkEn2QwGDZfc6QSU3...
He posts some videos of how to clean and re-season cast iron.

Some people coat with oil turn upside down and bake in an oven repeatedly but if its been though a dishwasher, has it rusted? I can't advise, however there are lots of videos on Youtube of how to get it back to what it is supposed to be.

Mine is the 8". But find it a bit small, two/three rashers of bacon and its full. Think I might just go the whole hog and go 12" then I can do pizza in it.

I've never met a Spaniard who would cook a Tortilla under a grill. My other half is Spanish. We have a large plastic "plate" we use to flip the tortilla over and then slide it back into the pan.

Yep rusted, along with a few other "expensive" French griddle pans.... will check you tube n see what can be salvaged

How does your other half feel about 12inches though? Mine thinks 8" is a bit of a handful, I think she'd struggle with 12".

I'd disagree with that. Yours looks nothing like as good I'm afraid.

Not convinced by calling it Spanish if you don't cook it the Spanish way. But that's the Brexit way I guess wink

Use rapeseed oil,higher smoke point than evoo etc.

If in doubt, oil the food too and don't attempt to turn it over until it releases itself

Said above, but essential once washed with minimal soap to put on a low heat to dry (dont leave to drip dry) then apply a small layer of oil with a kitchen towel. The more you use it, the better it will get. Try fatty foods first like bacon on sausages rather than eggs etc

I think the book I got the recipe from is incorrect. I think the correct name for the dish is a Frittata which can be grilled to set the top.
