Am I alone in absolutely adoring Chicken giblets?

Every time I get a free range, slow grown, ethically farmed chicken from Newlyn's Farm Shop they give me the giblets. It's a shame you don't get them with any other chicken...

I usually simmer them in water for a while and then, if feeling greedy, wolf the lot. If not then I just have the liver and mince the rest to go back into the water to start my gravy. Oh...I usually put the neck in the bottom of the roasting dish. This then almost candies and provides wonderful burnt on bits to help the gravy.

What do other people do with them?

I use them as a base for a chicken and vegetable soup.

I made a pate with the turkey liver after Christmas. It was quite nice, but I could have used more herbs/spices.

Portuguese cafe in Epsom does chicken giblets in tomato sauce with chips. It is fantastic. Throw in some chilli oil and consume with a glass of red wine

If you like giblets, ask your local (decent) Chinese restaurant if they'll do you duck tongues or chicken feet. Also fantastic.

Used to almost fight over them as kids!! The liver etc. was used in the gravy, the neck bit?? was a treat, gnawing on it was the winners prize! smile
