Just trying to work out if there's any of my organs which I don't need and would raise enough money on top of Harry to be able to do it!

That still seems very cramped to me, layout wise. There still doesn’t seem to be much lounging space.
A week or so back I had a nose around a brand new motorhome in the showroom, it had a sticker price of £120k. The leather seats smelt and looked like leatherette and I couldn’t get my head around the champagne glasses in the kitchen cabinet! But most of all it still seemed cramped to me, I confess I am not a fan of fixed beds.
Still, I am sure it isn’t something I need to work about, my 15k Hymer B544 suits us fine!

I'll be honest with you, that's our perception of a lot of new vans too. My Uncle has a Hymer B680 Starline S and it's a lovely machine - similar in lots of ways to the one I've attached the link for, but with twin rear beds rather than the 690 which has an Island double or this one with its diagonal one. But the issue we've had is that it feels less "loungey" than the layout we have with the bar and the sofa lengthways down one side. We always preferred ours. That was, however, until the dog arrived.
No we've got a slight issue that the dog feels a little "backed into a corner" when we're all in and it's surprising how difficult it is to walk up and down the van with the dog in it. In my head, another 1-1.5m might solve that issue but it would be very layout dependent.
I can't see us changing the van immediately since we need to give it a really good go with the dog and a longish Holiday. But if we find it a bit cramped, we may start looking in earnest. If interest rates stay low, I may even consider a cheeky remortgage to unlock a bit of cash for something special. But it would need to be absolutely the right one to do so.
The issue you may find is that all the continental makers are raising new prices for next year, which is going to firm up values of good quality used vans even more.
I have heard anecdotally that quite a few makers turned up at the NEC show with little or no spare production capacity, which is going to drive prices as well.
