We are expecting a raw leg of ham bone in by courier today with a number of other bits smile

Going to have it for Sunday for my birthday with the rest of the extended family..

It's raw & unbrined, question is I usually use a gammon so not sure if it would be OK to skip the brine and put the raw leg in the oven in a large pan with some veg, herbs and water to steam cook for 5 hours then roast with a marinade?

Or would it be worth brining it till Sunday morning, if so any simple methods??

Many thanks

If it's raw and un-brined then it's not ham, it's pork leg.

If you're planning on eating it on Sunday they it is a bit late to brine it.

Leg doesn't have a huge amount of internal fat or connective tissue so ideally I would pot roast it to stop it from drying out.
