Can anyone help, when in Jamaica I bought some real jerk spice. IE 6 little separate bags - one is red, one is yellow, 2 are sort of grey, one is brown and one is dried chili. Now, nobody actually told me what the hell to do with them. Im assuming that non are illegal drugs Ive accidentally smuggled into the UK and non smell like weed, which is a good start.

Does anyone know what they are to start with, and then how to mix them? do I use it as a dry rub or put with oil and marinate? What amounts of each do I want?

Jerk marinade is best made from fresh ingredients however I'd mix everything in some vinegar and add some minced garlic and marinate the meat for at least 24 hours
