Pork Mince recipes

A friend of mine used to make a really delicious, simple Thai pork mince dish. Served in lettuce leaves. There seem to be a lot of thai style mince recipes around, but this one was very sweet, sour from lime juice & vinegar, seasoned with the usual fish sauce, ginger, garlic, lemongrass and holy basil leaves. Yum.
Or else - use instead of or with beef mince for bolognese/lasagne?
I would have thought you could make a nice bit of meatloaf too, and meatballs?

Have cooked this a few times and it's a winner.. gets scoffed in our house anyway!

I use this recipe, with some minor tweaks (no veal or fresh mint). Cook a large pot full and then decant individual portions to zip-lock bags and freeze.

This Sichuan recipe works really well and the ingredients aren't hard to find.
I love the name also (the bits of pork sticking to the noodles look like ants climbing a tree).

its honestly great and completely different to a standard chilli, much fresher, rather than chilli sauce and sour crème, have it with a squeeze of lime and a pinch of coriander

Some good idea there already.
I've made good burgers with pork before. Just pork with seasoning and a bit of sage and thyme, a slice of grilled or fried apple and some brie going soft(er) on top. It's better with a brioche bun.
It might be an idea to make one to test if you plan doing these as supermarket pork mince can be really fatty/wet so you get quite a lot of shrinkage when you're cooking the burgers.

I make a Thai thingy and serve with noodles. You can just substitute it for Beef mince though.
