Pork free stuffing

I usually use sausagemeat based stuffings, but have my mother visiting for Christmas this year, who's allergic to pork and mushrooms. Last time she came for Christmas I ended up doing a basic sage and onion, but has anyone got any better recommendations?

I prefer the Mr Crumb done in the oven rather than dingbox ... better texture.

My particular favorite is the Mr Crumb Apple and Apricot.

You say basic but I like sage and onion stuffing, you just don't find it in restaurants. Its all sausagemeat which im not keen on so its a bit of a treat to get sage and onion.

my mum has always done her stuffing with beef mince instead of pork.
