New Camera time – Lens thoughts - Sony A6300

I’ve been enjoying my current camera for a while now (RX100 Mk2) and have decided it might be time to upgrade to something a bit more. Being used to the Sony and also wanting to try a bit of proper video (I currently use a Gopro for film) I fancy the Sony A6300, it seems to tick allot of the boxes.
Where I’m stuck though is on what lenses should I go for, if I buy body only, where do I start? I’m really planning all round use, family pictures, landscapes, sports shots (skiing, MTB, Cycling).
Would I be better getting a few ‘cheaper’ lenses such as a Sigma 60mm (portraits), Sony E55-200mm (General zoom) & a good prime lens like Sony’s E35mm.
Or the alternative, going all in on a single high quality (expensive) lens, like a Zeiss 16-70mm as an all-round; learn how to use that and build a collection over time?

I have a selection of cheaper lenses, but I gave up on swapping them all the time, so now I just pick one for the day and work around its limitations.
I mainly use:
16-50 - General purpose, not great quality, but I like the small size. But then my gf has an RX100-II which probably works better in most cases than the 16-50.
55-210 - This is a great quality lens for the price, used for zoos, airshows, motorsports etc. Obviously not on a par with the huge things the pros use, but combined with the fast phase detect focusing and rapid burst rate on the A6000, you can get some pretty good shots.
35F18 - Great for low light and portraits
A few cheep adapted primes for playing around and portraits - 50 F1.4, 40 F1.8, 28 F2.0
That Zeiss 16-70 does look tempting though...

I have the a6300 - as with a prime it still fits in my coat pocket (put a zoom on and it won't), so is with me all the time. I can HIGHLY recommend both the Sigma 19mm and 30mm primes. Really sharp, fast, thin, and both piss cheap. (WEX a good bet).
