Yes, you definitely want to protect the bodywork where it is close to the exhaust, especially around the headers, or the fibreglass will degrade and eventually go porous. I've seen various aftermarket brands used, usually self adhesive but often supplemented with rivets to stop the corners peeling - which obviously wouldn't be an option for an underbonnet heat shield. You thinking to protect the paintwork, or reduce the noise, or what?

My S1 has what appears to be original factory fitted underbonnet insulation, consisting of a semi-rigid moulded pressed grey mat with a fibrous middle layer and a metal mesh ( suppression screen? ) all sandwiched together and stuck to the underside of the clamshell.
I had a few times when it kept coming unstuck and jamming the throttle linkage, but eventually found that Gorilla Glue did the job a treat. No trouble since.
Alan 461 has gone minimalist and removed all of his underbonnet ( clamshell ) insulation and afaik has suffered no ill effects. But he hasn't got a 4.0 twin turbo lump in his S.

As above it was fitted from the factory. When I bought my S2, I had a problem one day with erratic throttle. Turned out to be the Mat had dropped and was catching on the throttle mechanism. To solve I pulled it off and never bothered with it again.
Until I came to sell it 13 years later. I stuck it back on with Eco stick. Some chap travelled all the way from Oxford to Manchester to view the car. The throttle stuck. He didn't buy it.
Moral of the story == make sure your glue is heat proof.

Some time ago I bought some sound deadening stuff from Noise Killers UK, after many failed attempts at sticking it to the under side of the bonnet (it was self adhesive but that didn't stick to the comparatively rough fibreglass finish)I gave up and it went in the bin!
thinking about it now some form of mechanical fixing is maybe the way to go
How about something like these glassed to the bonnet....

then some of these pushed into them, through the sound proofing sheet....

There's not been any on mine in all the time I've owned it. Watching the steam coming off it on a morning like today is very relaxing whilst stuck in traffic 
If I were to put something on it to keep the heat in I'd use zircoflex. I'm not sure why you'd want to keep the noise in or whether there's anything you could do that would make much of a difference without being extremely heavy.

Under bonnet just looks scruffy, wanting to bling up a bit, don't want to open the bonnet and it lets the rest of the car down. Found a product called Lizskin ceramic spray sound and heat insulation, don't have a UK stockist that I can find but Eastwood sells it so will give Frost a ring to see if they have some.
