Buying a car with no v5c, bad experience anyone?

Hi all,
Looking at buying a car from someone who is waiting for the v5 and only has the new keepers slip which means I won't be receiving a new keepers slip? Is it a bad idea since the new keepers slip doesn't have VIN number on it?
Has the process of taxing a car using the new keepers slip changed since the abolishment of tax discs? Never bought a car without V5 so any advice appreciated. The car is over 20 years old so chances of being stolen would be minimum I would imagine. Details shown on online MOT match the description of the car I.e colour, model, year.

Depends on car, price and most importantly person selling.
Meet a nice person, at their house, in a decent area = 99% ok

Obviously the first question is why don't they have the V5
But yes I've done it several times without issue.
Including a cheap Sierra Cosworth in the 90's which I admit I had sleepless nights about.

They bought the car from a colleague, car ran out of MOT when bought over a month ago. Current owner will put a new MOT on soon. The current owner tells me the previous owner only sent the V5 back to dvla a week ago. I believe he wants me to meet at his work place.
Car is £1k, not much but I still value my money so I thought I'll get some opinions before I take any step.

IME Traders, Private etc some are lovely some are utter tw@ts.
It does seem strange that so many don't buy using the yellow trade part of the V5 rather than adding an owner.
If you approach buying a car diligently then it shouldn't matter - most Trade warranties aren't worth the paper they're written on.

If I get a receipt with his address as it says on his driving license on a receipt signed by both of us noting car reg, date, amount paid would that suffice to protect me in case of something going wrong?
