Roast leg of lamb, cooking time.
Discussion
Help for an idiot please.
Going to do cider and honey roast leg of lamb, the lamb is 1.4 kilos and its a Gordon Ramsay recipe but for some reason I seem to be struggling on the total cooking time, blonde moment, who knows.
Recipe says cook at gas 7 for 20 minutes, take out add apples etc, put back in at gas 4 for 30 minutes, take out, baste etc, then put back in for rest of calculated time.
For medium rare it says approx 12 minutes per 450g, so i'm assuming approx 36-40 minutes for that final cook??? Am I doing this right?
20 mins at 7, 30 minutes at 4, then final cook of approx 36-40 mins still on 4.
I'm not worried about getting the honey, apples, cider, thyme, garlic bit wrong, I just seem to be over stressing if I've read the recipe right in reference to the cooking times.
Once the lamb is finally done, let it rest under foil/tea towel for 10-15 minutes whilst using the juices from the tin once sieved to make the gravy with some added lamb stock.

Yes you're reading the cooking instructions correctly, I calculate it to be 37 minutes for that last cook. Too late for today but it's worth investing 10 quid in a thermometer that you can leave in the joint of meat as it cooks. Takes all the guesswork out of it.

Cheers, I will be getting that thermometer. It was indeed a faff, but I'm not a very talented cook so was just following the recipe to the letter. Checked it after the last cook at 38 minutes but it was still a little too pink inside, it needed another 15 minutes. We have a new oven so this could be the reason I guess, as the roast potatoes were in for one hour, fifteen to get them right and they'd been part boiled for 10 minutes.
