I'm still not getting this as this seems to be more Texas BBQ than Indian? However it still looks very tasty

It was covered in a freshly made Tandoori paste and cooked in a hot oven above a pre-heated terracotta dish. The bhuna sauce was made seperate. Standard British/Indian cooking. The red paste certainly did get colour, but it was not charred above a flame.
