Completely deserved, I am actually cooking a lamb shoulder tonight inspired by your post, thanks for the idea

I'm still not getting this as this seems to be more Texas BBQ than Indian? However it still looks very tasty

It was covered in a freshly made Tandoori paste and cooked in a hot oven above a pre-heated terracotta dish. The bhuna sauce was made seperate. Standard British/Indian cooking. The red paste certainly did get colour, but it was not charred above a flame.
