Did a beef one yesterday and it was lovely, just beef, onions, carrots and a bit of seasoning (stock cubes,bit of onion gravy granules Maggi Liquid seasoning and Pepper), three and a half hours in the oven, served with nice creamy Rooster Potato mash and peas, my wife typically does them but tends to go even more basic and doesn't tend to cook them long enough.
I had been hankering after that for ages, when my wife makes one its ok, nice even but wanted one like used to get in a seventies and eighties as a kid that my mum made, so asked her for some tips and it came out just how I remembered.
Anyway, have now added a new dish to my limited repertoire, any suggestions on other casseroles to make, any tips ?

Quite similar to the above:
Fry off some smoked bacon / pancetta lardons until crispy, lob in slow cooker.
Toss good quantity of stewing steak in seasoned flour (flour/salt/pepper), fry until browned in batches so as not to overload the pan. Lob in slow cooker.
Cut up a few onions chunky or use button onions, fry until browned, lob in slow cooker.
Cut up some carrots chunky + celery (I do this fine so the kids don't notice), fry until browned, lob in slow cooker.
Now deglaze the pan with a can of Guinness, add a stock cube, bring it to the boil and add to slow cooker.
Good dash of dried herbs, bit more pepper, give it a stir and leave for 6-8 hours.
I'd put some 'shrooms in as well but the wife hates them.
Serve how ever you like, last time we had it with freshly cooked soda bread and some greens.

I did one yesterday too but, because I'm a lazy b
d, I threw some halved jersey royals (because they keep their texture and taste) in for the last hour. Plenty for tonight's tea and some for freezing too. Another simple one is lamb cutlet chops, carrots, onion, water and herbs, and sliced spuds to make a lid on the top. I tend to use skin-on Roosters, sliced about a centimetre thick. Do it right and you get a sticky top layer.This one is Excellent.

Sunday night I bunged some Toulouse sausages and a couple of cans of flageolet beans into the slow cooker. Didn't have any wine, so added (too much) cider.
Eight hours later... Oh no! Soup!
But I didn't panic and try and somehow thicken it. The beans and sausages were fished out onto a pile of mash, the remaining liquid will make a soup base. I think a bit of pancetta fried off, with some nettle tops and hogweed from the garden.
