bizarre. On further inspection and running the car the bottom hose to the rad doesnt appear to be getting warm so would suggest the thermostat is f ed. However, despite the otter switch being positionned on the rad pipe, shirley the fan should still come on if its "paperclipped" - regardless of whether the stat is buggered or not??? no? coincidence if both parts are buggered.
Remember that the otter switch is on the EARTH side of the fan IIRC - so don't connect it to battey live! (sorry if that's bleeding onvious but I've seen people misunderstand stuff like that before).
If shorting out the otter switch doesn't bring the fan on, try shorting the wires on the otter switch direct to earth. If still no go, then you need to look at the live supply, or the fan itself.
There's a connector to the fan just in front of the bottom fron chassis rail - try running a live and earth to there and see if the fan kicks into life. If it does, but doesn't in the other tests above, then it must be the supply side - fuse or relay etc.
Hope this helps.

cheers guys - thanks to the help of SotonS2 tonight we got her going and the fan works ok, as does the water pump and stat. Chuffed to bits as she is finally roadworthy after the head gasket replacement. Insurance and tax to be sorted in the week and then back on the road.....

What was wrong with it, in the end?
not entirely sure to be honest but seems it was a mix of a massive air lock in the system and a huge drop in coolant levels following a refill after we replaced the head gasket last weekend. We shorted the circuit and got the fan going and then the coolant level was increased she ran fine again, although the tappets are way out but we couldnt be bothered with adjustment for a short period.
