Practicalities of buying a car long-distance

Hello all,
More of an open question, living in Northern Ireland the used car market can be a bit limited, and I'm considering making a private purchase from the mainland. That would obviously involve a flight, public transport to the car then (hopefully) paying my money, signing the necessary papers and driving away to the nearest port to car ferry home.
My question to the floor is, what are the practical concerns about doing this? Obviously I'd have really done my homework and discussed all aspects of sale with the seller before coughing up for flights and travelling and assuming a test drive and quick look around shows everything is as advertised how do I go about legally driving the car away the same day?
1 - How best to transfer large sum of money ensuring it arrives in sellers account and he/she can hand over the keys.
2 - Filling out V5 etc (Think this one is straight forward enough) but leads on to
3 - Car tax; Since the new system is effectively tied to the driver not the car, can I tax it that day to drive away even though I obviously haven't sent away the v5 update?
4 - Insurance: Can I call and update my cover that day?
Finally a more nuanced point, how best to maintain leverage in price negotiations when the seller knows I've travelled a long way and will likely not want to go home empty handed?

I'd fly into whichever airport but I'd have a hotel booked so I'd have two days to find a car, as well as a list of possible cars I'd be interested obviously the one I like best at the top of the list, after looking at the first one if I didn't buy I might consider hiring a car so I could scoot around to the other options.
That way you don't feel pressured to buy as you now have options, now you may look at the first, I understand the hotel means extra expense but for the sake of £40 or £90 if you include car hire it gives you more scope to get the right car.
