Cycling Southern Spain

So Im off to Spain soon on holiday. Considering taking my mountain bike. Will be staying just above Gibralter. Any recommended routes in this area. I will have access to a car so can travel out a bit from base. I will be on an electric mountain bike so not too fussed by hilly routes.Single track preferred as well as some more technical downhill stuff.
