Using a Panini Maker - your tips and fav recipes?

Picked up a £20 panini maker in Aldi this morning, and before it goes to the back of the cupboard never to be used again, I think I should at least use it once or twice 
Only ever eaten Panini's while out, so any tips and favourite recipes would be welcome.

best bread you can get - few slices of sourdough works really well
Butter the outside, this will make it super crunchy
Way too much grated cheese on the inside- any that drips out will crisp up as it touches the hot plate
Not too often - both the above points don't make it the healthiest
Keep the fillings simple, fennel & garlic salami with a nice mature cheddar is my favourite and once it's cooked, a nice spread of onion chutney on top is soooo good (Fried onions in the middle is good too but takes extra effort)
