L405 Rear Seat Removal - Help please for dog Transportation?

We have two 70 kilo Pyrenean Mountain Dogs. They currently enjoy travelling in the back of our 2007, 4.4 Petrol Range Rover - In this car the seats fold over and forward, providing a completely flat space. This enables them to comfortably stand up in the whole rear area of the car (combined rear seating and boot area).
We could really do with a newer L405 for longer journeys, although the problem we have is that the rear seats don''t fold completely flat in this model. Our dogs love to travel with rear windows down and heads out, yet with the L405 there's not sufficient head room for them to stand by the back windows, due to the seats not going completely flat (if that makes sense).
So my question is this, can the rear seats in the L405 be removed?
If so, will it affect the rear seat belt warning system (in other words, will it keep bleeping at me)?
Also, after 3 years old, would the car fail it's MOT without the seats in place?
Finally, can anyone see any other problems likely to arise from the rear seat removal?

Thanks for the info G Man and I absolutely love your dog, he / she is beautiful. They're fantastic dogs aren't they, although at times a bit of a handful.Since posting this thread I've spoken with Overfinch who've come up with a solution for cheating the seat belt system, to avoid the bleeping. They're just working out a price to modify the space once seats removed to make it completely flat.
