10-15k Practical & Quickish Midsized Petrol Car

Currently looking around for a used car to replace my other half's Octavia VRS Estate Diesel (Tractor) lease car when it's returned next month.
Want to spend 10-15k ideally, must be petrol and be able to pull the skin off a rice pudding, no more diesels from now on, but would prefer 30+ mpg.
It needs to be fairly practical, decent sized boot with good hatch aperture. For work she needs to be able to get a wheel chair in and out of the boot easily. She managed with our Scirocco R, but it was a bit of a struggle with the small hatch size and high sill.
Also we have two large dogs, dogue de bordeaux and american bulldog. They can go in our campervan for any longer journeys. But for short journeys to the vets and such it would be useful to be able to get at least one of them in the boot easily. They certainly won't be going in my new S5 Sportback.
Some of her clients are elderly so easy access to the front passenger seat is important, therefore no bucket seats. The Octavia is fine, the Scirocco less so.
Something smaller than the current Octavia estate would also be preferable.
I'm thinking about a Mk6 Golf GTI 5 door, what are peoples thoughts? We've also looked at the Mini Countryman Cooper S, but they are rather ugly.
If anyone has any other recommendations / thoughts they would much appreciated.
I'd like to buy a Megane RS 265 or Fiesta ST for something more fun, but the boots wouldn't be practical enough.

She would be a bit hesitant about rwd in winter weather, not that we get it that bad in Durham. But I could always put some good all season / winter tyres on, or find an xDrive at a decent price.

I do like the Focus ST Estate, although I've never owned a Ford, all that I've driven have impressed me with their handling and composure, which were only cooking models as well.
The things which put me off were the poor infotainment system on pre-facelift cars, not many facelift models around at 15k. Also the mixed reviews in the media with criticism about traction issues and torque steer. Although the significance of those issues is likely exaggerated?
My other half has always liked the S3, but she used to have a 2004 A3 which we sold for buttons about 5 years ago. Therefore it might seem strange going back to the same platform 5 years later, admittedly at the other end of the range. However the Mk6 Golf GTI I'm considering is essentially the same platform as well, as was the Scirocco R we've just returned.

I think we'd regret getting a 1.4 TSI, she always complains about the vRS diesel and previous Volvo S60 D3 being too slow after she used to have a hawkeye Impreza WRX wagon with modifications. The Cupra would be more than we're looking to spend, but I could always keep an look out for a 1.8 TSI.

I thought that may be the case with the ST, never had any issues with my Scirocco R 280 or the 2008 Leon Cupra which was remapped to circa 300hp.Or you could get the S4 which is around the same size as your VRs but has a bit more grunt.

We'll look some more at the ST and S3.
I'd love to get her a B8 S4, especially with MRC stage 2
