We've got some friends round this Saturday for dinner, one of whom is a veggie. Normally I would do a big meaty dish and everyone have a portion, however here I will be making a veggie dish that needs to pass muster as a standalone dish rather than just 'here you go love, you can make do with the potatoes and peas'.

I was thinking of a moussaka, just wondered if anyone had any suggestions or decent recipes care to share?

I live with a veggie so mostly eat veggie stuff at home, what surprised me was how mucg stuff wasn't vegetarian that I had just assumed was - for instance a lot of hard cheese is made with rennit (?sp), and a lot of cheesecakes are made with gelatine. Most supermarkets are good with marking ingredients as 'suitable for vegetarians' now.

With enough sauce, the Quorn stuff is a fine replacement for meat in terms of taste, the texture isn't as nice but a veggie won't know that! The 'meatballs' are nice and quite big.

It's basically shove a load of veg in a pot, fry for a bit, add a load of beans and spices.
Similarly bean stew is nice, we also put them in wraps quite often but I guess that's not a dinner party dish.

Delia's nut roast recipe is nice but I can't see it online, not sure how easy it is to scale down to one person either and it needs some sauce otherwise it gets a bit samey.

Are you cooking a separate dish for the veggie, or one for everyone?
What stage of veggie are they ?


Vegetarian lasagna?
Maybe go Indian?

Undecided but erring towards doing one for all - seems silly to give one person a token dish when 5 others are having something different.

Lasagna is certainly an option, we did Indian last time so fancy a change.

I used to make a vegetarian friendly lasagne with the sauce based on lentils. For reasons of student poverty, not avoidance of meat. It was OK.

Vegetable crumble.

Veggy pieces in a thick white wine sauce topped with crumble mix and cheese.

Do a huge bucket of Tomato and mozzarella risotto with roasted Mediterranean veg (red onions, courgettes, peppers, aubergine). Serve with rocket and olive oil. Bloody lovely that. lick

Hugh Fearnley Whittingstall has the recipe in his veg cook book. Just get veggie approved cheese and you are sorted

You can replace the ball-ache of making your own passata with a carton and a good tablespoon of Italian herb mix, simmered for 10 mins.
