I did a fair amount of research into them. As you say, nice ones that have not been barried are rare, but do exist. V6s are slow and barely use any less fuel than the V8 but are at least reliable. V8s have a fair number of issues - do a search.
Turbos are really not expensive to buy vs a V8, and are often more cared for, and are more reliable than the V8s. Fast.

Unless something has changed since I bought mine in 2013, it's not true to say that turbos aren't much more expensive. They were generally £2-3k more than the V8s when I looked and when you're talking sub £10k cars that's a fair difference.
I find my 4.5S (2003) excellent - and if I was buying again, would happily buy the same. I didn't check mine carefully when I bought, and it did cost me money sorting a few things when I bought it (but nothing catastrophic) but it's been pretty faultless in the last 2-3 years. I think they're excellent cars for the money as long as you find a good one.

I've had mine since new (2004) and overall its been great and has seen plenty of use (200k +)
certain things are prone to going; the coolant pipes being one as they used VW plastic pipes which go pop; prop shaft too (both went on mine much later that usual due to the motorway mileage and low wear & tear) and the PCM is utter s
te (although mine is now properly dying but to be expected given the use its had - PCM not the car)
latest repair was new fuel pump but given the mileage I expect the occasional bill & year by year decide if I keep it going or give up. Quite fond of the big old bird so she keeps avoiding the chop. General servicing is ok but any other repair bill will be commensurate with the badge!
if its been OPC or specialist cared for they can be good buys for not a lot of money.

I often think I'd like to replace mine with a newer one - but the only thing I really don't like about mine is the mpg, and the newer ones (~£20k budget) don't improve that anyway. Everything else it does brilliantly, and I'm not sure I'd really notice it was better in a newer car.(Except PCM as you mentioned. I'm pretty sure that was already out of date when the car was new!)
