Seitan recipes

Theres loads of stuff on the web but I'd be interested in things people have tried and are actually really good.

Sausages are an obvious thing to make, possibly a burger but the texture seems a bit wrong. Too dense and chewy.

Not cooked by me, but I've eaten it sliced and fried in a peanut sauce. Delicious it was.

I'd imagine that any way you might use tofu would work equally well with seitan.

LOL yeah, apologies for this one!

I'm looking for ideas I can use at work. Feeding kids mountains on Quorn isn't much fun for them and I fancy a go at making some vegan pepperoni, sausages etc for one of the staff who always struggles at lunch.

Theres loads of "how to make seitan" on the web but nothing looks particularly clever, just dodgy rubbery blobs!
