Your best turkey gravy recipes

I’m now home for two days then I return from work Christmas Eve so it would be nice to make a little head start.
Last year I did a Jamie Oliver recipe. Basically chicken legs on a trivet and make a gravy. I didn’t care much for the star anise in the recipe. Shall I do the same this year and leave out the star anise?
